FAT AND OIL
Use of fat/ oil has become essential in the poultry because it helps in achieving high energy in the feed. This gives better FCR in Broilers and enhanced productivity in Layers and Breeders. There are various sources of fat/oil. They are Vegetable oil and their derivatives, tallow fish oil and formulated vegetable oil. These sources have different fatty acid composition and varied digestibility factor.

FAT DIGESTION
Fat digestion occurs mainly in the small intestine of the bird. Since fat is not soluble in water (like carbohydrate/protein), the nature has provided a process of two immiscible liaquids in one system. Examples in nature are milk and butter. Emulsification is possible due to secretion of bile which acts as a bio surfactant. Bile secretion contains bile salts, cholesterol and phospholipids. This process enables Lipase enzyme to break the fat into diglycerides monoglycerides and fatty acids. Further absorption of the fat molecules thus becomes simple.

MORE ABOUT OF FAT DIGESTION
There is postitive correlation between fat digestibilities and available metabolizable energy (AME). There are three major factors responsible for fat digestion.They are secretion of bile salts, activation of lipase and fatty acid structure of feed fat. It is now known that secretion of bile salt is inadequate in the early chick life than the lipase in comparative basis. It is also known that fatty acid compostion has varied digestibility co effcient. The other factors that affect the fat digestibility are malfunctioning ofliver, pancreas, gall bladder and small intestine.

LECITHIN AND LYSO LECITHIN
LECITHIN (PHOSPHOLIPID) is synthesized in Liver (endogenous) and is also available from the feed sources (exogenous). Lecithin is a bio surfactant and is both water soluble and fat soluble. it forms the micelles of fat globules in the lumen of the intestine and forms a thin film around them. This surfactant property is mainly responsible for the action of lipase on the fat. Thus lecithin is a suitable bio surfactant and emulsifier

LYSOLECITHIN (LYSOPHOSPHOLIPID)
Like lecithin the lysolecithin is also present in the nature. It is essential structure of all living cells-the p[lasma memb rane.

Lysolecithin is converted from lecithin by enzymic action in the laboratory.
Lysolecithin acts as membrance fluidity modulator. This results in very rapid absorption of nutrients in an astonishing way.Just as lecithin form the "micelles" the lysolecithin form the "liposomes" These liposomes create microsocopic envelopes that can be filled with useful substrated. Liposomes are far better absorbed than micelles. Lysolecithin is also superior bio surfactant than lecithin due to size, shape and electric charge. It is estimated that Lysolecithin is at least 7 to 9 times better efficient emulsifier than the lecithin(David Garnett) The extra addition of fat will go waste if adequate bio surfactant is not provided to aid its digestion. Since the endogenic source is limited, there is need to supply the exogenous source of bio surfactant from the feed. There are two sources of available biosurfactants the lecithin and lysolecithin.

DOSAGE
500 to 1000 gm per ton of feed depending on the quality and quantity of oil used or as recommended by nutritionist.
